Marcel Proust recounted it perfectly in a passage from In Search of Lost Time
that rendered madeleines eternal. It happens when we find ourselves reliving a foregone moment when we least expect it, as if we were really there. This can happen when tasting traditional desserts, especially Torta della nonna. Just a few simple ingredients (shortcrust pastry with butter, lemon custard, pine nuts and almonds), and in an instant we are children again.
