Dolce Tuscia can boast, to date, the largest production range of frozen gluten-free confectionery in Italy. This Gluten-Free line has been conceived for celiac sufferers and people who are intolerant to Gluten, but who do not want to stop enjoying the wholesome taste of home-made pastries of the highest quality standards and which are just as good as traditional pastries containing gluten.
This food intolerance is rapidly spreading at global level (National Epidemiology Centre of the Italian Higher Health Institute), with a consequent burgeoning demand for gluten-free products (according to the Ministry of Health, over one million Italian consumers are interested in gluten-free products). Hence the company has decided to compile a large catalogue to demonstrate its strong nutritional education commitment.
A commitment that translates into a big challenge as regards raw material research and the possibility of creating new formulas, improving the products in terms of flavour, consistency, digestibility and nutritional value.
